This has become my go-to meal for good reason: it's simple, quick, easy, and packed with protein while offering endless possibilities. The technique creates this amazing crispy-chewy texture where the seasoned chicken becomes one with the tortilla, and then you get that fresh contrast from whatever toppings you choose. Whether you're craving something Mediterranean with feta and olives, classic like Caesar with parmesan and croutons, spicy buffalo with blue cheese, or south-of-the-border with avocado and lime, this technique adapts to whatever flavors you're in the mood for. It's perfect for when you want something satisfying but don't want to overthink dinner.
The Basic Technique
What You Need:
Ground chicken (about ¼ lb per wrap)
Tortilla of your choosing - I usually do flour but any will do
Your choice of seasonings
A medium-hot skillet
Oil for cooking
Toppings of your choice
The Method:
Season and spread: Place your ground chicken directly on the tortilla and season it right there. Use a fork to press the chicken firmly into the tortilla so it adheres well.
Cook chicken-side down: Heat your skillet over medium heat with a little oil. Place the tortilla chicken-side down and cook until the chicken is cooked through and lightly browned (about 4-5 minutes).
Flip for color: Flip the tortilla so the chicken is now on top and cook for another 1-2 minutes to get a bit of color and flavor on the tortilla side.
Prep while cooking: Use the cooking time to prepare your fresh fillings so assembly is smooth at the end.
Assemble and enjoy: Remove from heat, add your fresh toppings to one half, fold like a taco, and enjoy while warm!

Pro Tips
Don't skip the pressing: Really press that chicken into the tortilla with a fork so it becomes one unit
Prep your fillings first: Have everything ready to go so you can assemble while the wrap is still warm and crispy
Make it your own: These are just starting points – mix and match seasonings and toppings to create your own signature version
The beauty of this technique is that once you master the basic method, you can experiment with any flavor combination you're craving.
